Open Championship chefs prepare for mammoth task
15 Jul 2010
As Tiger Woods tees off at St Andrews today, head chef Trevor Garden and his team of 44 chefs are beginning one of the busiest weeks of their lives, when they will prepare up to 20,000 meals for the players, caddies, international press and spectators.
With large food orders coming from the Players, Trophy and Links club restaurants and five celebrity dinners, 660 beef fillet steaks, 240kg of lamb, 160kg of back bacon and 400 litres of organic milk will be among the team's supplies, all sourced from local Scottish farms.
Head chef Trevor Garden, who also catered for last year's Open Championship at Turnberry, has spent months planning his menus, recruiting chefs and sourcing the best Scottish suppliers. Living on-site, he will be "personally checking every single dish before it is served." Since it is The Open's 150th anniversary, he stated that he plans to make it an extra special occasion "by delivering magnificent food using world-class Scottish ingredients".
