Nine of the world's top chefs met in Lima at the weekend to try and define what they believed should be the role of future chefs.
"We keep dreaming about and reflecting upon the challenges to our profession. It is our hope that these reflections will serve as a reference and inspiration for the young people who will become tomorrow's chefs."
The Open Letter to the Chefs of Tomorrow, sets out what they feel the responsibilities of chefs are in relation to nature, society and knowledge.
